Meet the bagel makers

L.A. has never really been known as a bagel town.

Sure, you could always pick up a decent dozen from a bagel chain to bring to a brunch, or get a quick egg and cheese bagel sandwich to gobble down as you guzzle your hazelnut roast, but we haven’t historically had a “bagel culture” here in the same way that New York City has.

Now, we're in the midst of our own boiled-then-baked-ring-o’savory-dough boom with self-made bagel mavens single-mindedly focused on achieving artisanal excellence. Even New York's local rag is acknowledging California's bagel scene as the reigning champ.

We talked to three bagel shops about L.A.'s bagel renaissance: Belle's Delicatessen & Bar, which has been in the game since 2012, Hank’s Bagels, which blew up in 2019 a few months before the pandemic shutdowns, and newcomer Daniel’s Bagels, whose baker is a recent college grad who opened a shop over the summer.

Daniel Messinger of Daniel's Bagels started dabbling in bagel production while still a student at U.C. Santa Barbara. When the pandemic lockdown canceled classes in 2020, Messinger moved home to Northridge. Not being able to leave the house, he spent a lot of time reading online recipes and watching YouTube videos about bagels — adjusting, adapting and perfecting his bagel recipe.

He started to bring these bagels to family and friends, and thought, "Well, maybe this could be a business." After graduating college in 2022, he started to bring his products to farmers markets, and worked from a commercial kitchen, and partnered with his brother Ben, who works in marketing, to help grow the company.

For Messinger the ideal bagel is "nice and crispy outside, very soft, fluffy inside. We do smaller bagels — no bagels as big as your head. We're on the rip-and-dip smaller side of things."

In June, they opened their first brick and mortar in Palms. “The response has been great,” he said. “We've become part of a lot of people's routines. Walk over, get some bagels."

“In the first few weeks we were selling out early, so we had to compensate, just keeping up with the capacity limits and finding a way to add more staff," he added.

Now, on their busiest days they make between 1,000 and 1,500 bagels.

The secret to making a great bagel:

Messinger said “to make a bagel doesn't require a crazy amount of knowledge. But to make a really good bagel takes a lot of practice and trial and error".

At this point he estimates he’s made hundreds of thousands of bagels. "It doesn't get easier. There are all these changing variables. If X is happening, how do you adjust the variables to compensate?"

Recently the weather has been very dry, "so we are trying to keep dough from drying out.”

After perfecting his bagel recipe at his parent’s home during the pandemic, and later making a name for himself while consistently selling out his product at local farmers markets, Daniel Messinger has now found a brick and mortar home for his popular bagel shop.

“It’s just good old fashion bagels,” said Messinger, co-owner of Daniel’s Bagels, which held a grand opening celebration for the new shop in Palms.

After perfecting his bagel recipe at his parent’s home during the pandemic, and later making a name for himself while consistently selling out his product at local farmers markets, Daniel Messinger has now found a brick and mortar home for his popular bagel shop.

“It’s just good old fashion bagels,” said Messinger, co-owner of Daniel’s Bagels, which held a grand opening celebration for the new shop in Palms.

“We do everything the hard way. We don’t skip any steps in the process. These bagels are coming out hot and sometimes people are getting them two, three minutes after they come out of the oven. We’re just trying to be the freshest bagels in town,” he added.

Located at 3400 Overland Ave., Daniel’s Bagels held its grand opening on Sept. 27 serving daily-baked bagels alongside house-whipped cream cheeses.

The new sit-down spot is keeping the same offerings that made Daniel’s Bagels a fan favorite at farmer’s markets, with eight bagel options on the menu that include plain, sesame, onion, salt, rosemary, chocolate chip, cinnamon raisin and for those who can’t make up their minds, the “Everything” bagel, which well, includes everything. He’s also offering house-whipped cream cheeses plus coffee.

“We really put an emphasis on the bagel as the star of the show. We don’t go too crazy with any toppings or anything like that, we keep it as simple as our bagels coming out fresh from the oven and they’re all hand rolled,”Messinger said.

For Messinger, making bagels started as a hobby when he had to move back home to his parent’s Agoura Hills house during the pandemic. With time to kill and a love for bagels, he began playing around with recipes and delivering bagels to his friends. With a lot of positive feedback from his friends and family, Messinger began selling his bagels at local farmer’s markets in Playa Vista, Brentwood, Mar Vista and Torrance.

“We always had a dream of making it to a brick and mortar location,” Messinger said. “Finding a location here in Palms that was so central to our existing customers was just awesome,” he said.

And if you can’t make it to Palms, no worries because the new shop will serve as the commissary kitchen for Daniel’s Bagels’ popular Farmers’ Market stands in Brentwood, Mar Vista, Playa Vista, and Torrance.

Previously, Messinger operated Daniel’s Bagels out of a commercial kitchen subleased part-time from a cupcake company in Northridge, CA. With high demand consistently causing his farmers’ market stands to sell out, Daniel and his brother and business partner, Ben, began exploring ways to increase bagel production and serve more customers. Their search for a permanent Daniel’s Bagels headquarters led them to the Overland space, which Daniel and Ben see as their home base for years to come.

Daniel’s Bagels will feature the following weekly schedule:

  • Wednesdays, Thursdays & Fridays: 7 AM until sellout or 1 PM (whichever occurs first)

  • Saturdays and Sundays: 8 AM until sellout or 1 PM (whichever occurs first)

We had the good fortune of connecting with Daniel Messinger and we’ve shared our conversation below.

Hi Daniel, can you walk us through the thought-process of starting your business?
I’ve always loved cooking and baking and made homemade bagels for my family and friends on several occasions. They were so popular that when the pandemic caused me to be home from college and I started making bagels more often, people began asking to try them, and thus, Daniel’s Bagels was born! While everyone was stuck at home, I began making and delivering bagels out of my home kitchen and customers appreciated the contactless delivery service for a delicious product that helped bring their families together during a difficult time. Now selling at two of the most prominent farmers’ markets in Los Angeles, Daniel’s Bagels operates out of a commercial kitchen where we’ve been able to expand our bagel production in an effort to meet the demand we’ve received!

What should our readers know about your business?
Daniel’s Bagels was one of the many businesses born out of the COVID pandemic and started as a bagel delivery service. After my college graduation in 2022, I shifted my focus to selling bagels at local farmers’ markets in order to reach a wider audience. Our bagels are made with high quality ingredients without additives or preservatives. Each bagel is rolled by hand and boiled before being baked, giving them the signature crisp crust and pillowy soft inside that is essential to a great bagel. This time, care, and effort that we put into our product can be tasted and appreciated by each happy customer. Customers who are self-proclaimed “bagel connoisseurs”, many of whom are from the East Coast, are thrilled when they try our bagels since the high quality bagels they are used to can be difficult to find on the West Coast.

I’m extremely proud of all the work I’ve put into creating and building my business around a simple, high quality product that people are excited about. While it is extremely challenging and all-encompassing to start and manage every aspect of a new business, the prospect of growing the business and making our product available to more and more people motivates me, giving me the energy to continue moving forward and overcoming any obstacles. On challenging, long work days, I’m propelled thinking about the many positive interactions I’ve had with customers who often say things like “We came to the farmers’ market just for your bagels,” or “Thinking about your bagels got me out of bed this morning”. Having invested so much of myself in this brand and product, it’s extremely rewarding when you hear that people who were previously complete strangers think about and eagerly look forward to getting their bagels each week.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
LA offers such an eclectic mix of amazing places, people, and things and here are some of my favorites! For some great ways to start the day, head to Lodge Bread for a sourdough croissant or avocado toast and the walk-up window at Country Kitchen in Malibu for a delicious breakfast burrito. Some of my other favorite things to do in Malibu are taking a walk on Malibu Pier and getting the best lobster roll at Broad Street Oyster Co. A stroll through one of LA’s countless farmers’ markets is another fun and yummy way to spend a morning (my favorites are Brentwood and Playa Vista, but I may be a little biased). The farmers’ markets are also a great place to stock up on goodies for a sunset picnic on the lawn at Griffith Observatory. The Getty is a fun place to spend a day enjoying the art, gardens, and views. As a huge Dodger fan, I’ll never say no to catching a game at Dodger Stadium, despite the heavy gameday traffic. Some great dinner options are Din Tai Fung for dumplings, Ospi for Italian food (get the chicken parm!) and Sugarfish or Katsu-ya for some of the best sushi. Having attended UCSB, I love Santa Barbara and all it has to offer, so squeezing in a day-trip is essential! Some of my favorite places in SB are Renaud’s Patisserie & Bistro, Los Agaves, and Bettina.

Who else deserves some credit and recognition?
Each member of my family has contributed to my business in a unique and essential way and I’m so appreciative for the support they’ve each provided. My parents have both made huge impacts on Daniel’s Bagels, allowing me to launch my business out of their home kitchen and providing help and guidance whenever I’ve needed it. My younger sister Hannah was my first “employee”, spending countless hours making bagels and delivery driving during the pandemic. My older brother Ben continues to contribute behind the scenes, utilizing his business and entrepreneurship background to help me find ways to grow Daniel’s Bagels.
